Recipe of the day: Vegan Buddha Bowl - Inspired By: Chef Rima Habjoka

100% vegan snack, easy to prepare 😍


Our recipe for today is baked tofu with your choice of veggies and legumes dressed in tahini.

Ingredients:

16 ounces extra-firm tofu

4 Tbsps low sodium soy sauce

3 Tbsps rice vinegar

1 Tbsp maple syrup (optional)

2 garlic cloves, minced

1 Tbsp ginger, grated

2 Tbsps sweet chili sauce

Optional spices: onion powder, paprika, thyme

At first, you need to press the tofu to drain most of the water (we prefer the use the extra firm tofu). Cut into cubes, and place the cubes in a shallow dish or you can use a plastic bag.


Combine all ingredients together and pour onto the cubed tofu and leave to marinate for two hours (covered) - You can leave it overnight for more flavor.


Preheat your oven to 400°F/200°C


In an ovenproof dish/ pan, add the marinated tofu into the pan. Do not discard the marinade sauce. Bake until the tofu is golden brown on each side.


Choose what you like from vegetables and bake in the oven as well, here are some options: Brussels sprouts, red onion, apple, beets, cauliflower, cucumber, carrots, cabbage, peppers, tomatoes, sweet potato, squash.

Next, you can mix the vegetables with tofu and use tahini or marinade sauce as a dressing.


And VOILA! 😋

** note: for extra protein content, you can add: baked tempeh, lentils, beans, and chickpeas. and for extra crunch add some nuts. 😆

You can store leftovers in a cover container in the fridge for 4 days.
