Recipe of the day: Vegan Carrots Bites - Inspired By: Chef Rima Habjoka

100% vegan snack, oven free recipe, 4 steps recipe

Ingredients:
1 cup chopped carrots ( chopped in a food processor)
1/2 cup walnuts
1 cup rolled oats
8 pieces of Majdoul dates ( pitted)
1 tbsp of peanut butter ( any butter will do)
2 tsp ground cinnamon
1/2 tsp ground nutmeg
First, add carrot chunks to the bowl of a food processor and pulse until finely chopped, and set it aside.
Then, pulse the rest of the ingredients, until you see that the mixture is binding together, then add the carrots.

Next, pulse until a smooth-ish, sticky “dough” forms (as shown in the picture).
Finally, roll into balls.
And VOILA!
** note: You can add flaked unsweetened coconut as a topping. Or you can add white chocolate chips to the dough if you like. Or you can add both 😆.
