How to cook healthy? Recipe of the day: Musqaa - مسقعة

Since cooking is an important step in being healthy, I'm gonna show you how do I cook our meals and let you know the exact calories in the meal for each person.

Today I cooked the Arabian food (Musqa'a), the amount I cooked is enough for 12 -15 people.

So, let's start...


our recipe of the day: the traditional food "musqa'a"

Ingredients used:

600 grams lean meat

75 gram = 5 Tbsp of corn oil/ vegetable oil

1 whole onion chopped into small pieces

5.25 tsp spices 2 is salt

1 medium-sized green pepper

1 garlic clove

6 fresh tomatoes

1 glass of water

1 small package of tomato paste

4 medium-sized eggplants

First step is to cook the meat, we stir the onion with the vegetable oil until it's slightly cooked then we add the lean meat.

Then we mix them until the color of the meat turns brown (like shown below).

After that, we add the spices to the meat, you''ll need:

1/2 tsp cinnamon

1/2 tsp ginger

1/2 tsp cardamom

3/4 tsp black pepper

1.5 tsp salt

Next, we replace the meat on low fire for 10 minutes until it's well done

Later, we add the green pepper to the mix after chopping it, and we add small package of tomato paste and the blended mix of 6 medium-sized tomatoes and one garlic glove with one glass of water to the meat along with some spices:

1/2 tsp ginger

1/2 tsp black pepper

1/2 tsp salt

1/2 tsp cardamom

1/2 tsp mixed spices you usually use



After boiling the mix, it will need around 15 minutes cooking on low fire. Your mix would look like this:

After making the sauce, we will fry 4 medium-sized eggplants chopped into half circles or the way you want. Each one's thickness would be around 2 cm.

Then we arrange them on the pan to cook it in the oven.



You replace the first layer, then you add the sauce you made earlier, next, you'll apply the second layer, and try to replace a little bit of the sauce on the surface of the eggplant so it won't be dry while cooking in the oven.

We put the pan in the oven at temperature of 250 Celsius and we stay around the oven to check it every now and then. (it'll need about 25 -35 minutes in the oven)

After that, we roast the pan from up, so it would look yummy.

Here comes my nutritional advice:

1. While frying the eggplant, don't replace them directly into the main cooking pan,

put them on a side dish until the frying oil is drained to the plate and then replace them to the cooking pan with the smallest amount possible of frying oil inside them.

2. Don't over cook the tomato sauce, cause you might loos the nutritional value from the tomato like: vitamin C and lycopene (both are great antioxidants).

3. Don't consume too much salt, especially in this meal, cause we used one tomato paste which might has extra salt. Healthy individuals shouldn't consume more then 4 grams of salts daily.

4. For weight loss, remember to eat one cup of salad with out oil, along with one cup of "shanenah" drink.

One plate of this meal contains 120 - 150 Kcals

One plate of this meal with one small white/ whole bread contain 390 Kcals

One plate of this meal with 16 Tbsp cooked rice contain 390 Kcals

One plate of salad contains 35 Kcals

One shanenah drink OR One cup of yogurt contains 130 kcals

In total of :

one plate + one bread + one cup of salad + one cup of shaneneh = 540 kacl

which equals a healthy and a balanced meal
